The Famous Hedgehog Bakery is based in Long Crichel in East Dorset. The bakery makes tasty bread from the best organic ingredients (including Stoates Flour). Nothing is added to prolong shelf life - no additives, enhancers or improvers.

Traditional techniques are maintained. The doughs are moulded by hand and are allowed to prove slowly through a number of stages on linen 'couches' in wooden cupboards. They are then placed in the wood-fired bread oven using wooden 'peels' creating a natural and digestible bread. Despite no additives, the bread retains moisture well due to the crisp crust that acts as a natural wrapper - a result of wood-fired baking.
Long Fermentation Hedgehog. Simple ingredients and TIME. The dough is proved for 24 hours until all the yeast has been activated.
French Country Sourdough based on the classic Pain d'Auvergne; 2/3 unbleached white and 1/3 wholemeal. A good keeper.
Malted 5 Seed Sourdough. A gorgeous combination of Malthouse flour and sourdough loaded with linseed, millet, sesame, sunflower and wheatgrain.
Khorosan. An unhybridised old grain, originally from the Middle East, full of amino acids and high in protein producing a lovely nutty taste.
Almost Wholemeal Sourdough. Simply wonderful. An excellent all-rounder with a slightly dense, moist crumb.
100% Rye Sourdough. Wholemeal dark rye. Moist with a slightly dense crumb and ideal with smoked fish and cheese.
Organic tarts. Rich and flavoursome tarts with melt-in-the-mouth pastry. Prune & Almond, Apricot & Almond, Chocolate, Lemon Curd.
